Executive Chef (Chinese) Ref: EC(C)
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happly Valley and Sha Tin Rececourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.

As the Executive Chef (Chinese), you will assist the Food & Beverage Manager in the management of the Chinese kitchen at Happy Valley and Sha Tin Rececourses during race and non-racedays. You will have to plan and oversee food production, ensure a high standard in food quality, introduce new dishes, design menus, arrange food promotion, conduct training, and maintain a high standard of hygiene and safety in the kitchens. In addition, you will also assist in the preparation of annual budget and handling of administrative work, such as food ordering and staff rostering. You should have:

- ten years relevant experience in prestigious hotels or restaurants with three years in similar position
- experience in Chinese banquet and solid knowledge of different Chinese cooking
- skills in planning, organising and administration
- knowledge of PC applications is preferred

An initial 2-year contract employment will be offered to the successful candidate with an option for renewal subject to mutual agreement between the Club and the individual.
